                         Upkari’s are simple stir fry curries which we mainly prepare as side dish.You can find a whole range of upkari’s in the blog under the title Upkari .Today sharing yet another simple one using Cabbage.The cabbage upkari is one of the simplest and quickest too as it cooks fast.I sometimes add different veggies in combos to make it more colourful which makes it even more interesting. Sharing all the versions here which I prepare .Choose the one you love and get started to prepare and relish this

Original and regular version

Ingredients: Regular Version( Pic above)

  • Medium sized cabbage chopped
  • A tbsp of chana dal
  • A tsp of mustard seeds
  • A tsp of urad dal
  • A few methi seeds
  • 1 large onion chopped OR 1 potato chopped into small cubes
  • Curry leaves a few
  • Red chillies  as per  spice level
  • 1/4 tsp haldi powder
  • Salt to taste
  • A tbsp or two of oil OR as required
  • A tbsp of grated coconut
Method:- 
  1.  Heat oil in a wide pan and add mustard seeds,when they splutter add chana dal and urad dal, broken red chillies and stir.
  2. Add chopped onion and fry ,take care not to brown them ..once they turn slight pinkish add haldi powder and chopped cabbage and mix well.
  3. Sprinkle some water ..add salt and close the lid.
  4. Keep checking in between and stir from time to time to avoid burning, .sprinkle water in between if needed.
  5. Once the cabbage is almost cooked, check for salt ..add coconut and mix again.. close the lid for some 2 minutes and switch off.
  6. The delicious upkari is ready to serve.
Note: – You can add potato instead of onion..in that case after adding potato cubes, add haldi powder sprinkle some water and close the lid for 2-3 minutes,.. Open the lid and add cabbage and proceed as above.
VERSION 2: USING PEAS AND CARROT
Ingredients:-
  • 1 medium cabbage chopped
  • A tsp of mustard seeds
  • A sprig of curry leaves
  • Red chillies – 1-2
  • A handful of fresh and tender green peas
  • 1 carrot peeled and chopped
  • Oil as required
  • Salt to taste
  • Coconut gratings –  2 tbsp
Method:- 
  1. Heat oil in a pan and add mustard seeds..when they splutter add curry leaves and red chillies and fry.
  2. Add carrots and peas ..sprinkle some water and close the lid.
  3. Cook it for 2-3 minutes.
  4. Open the lid and add chopped cabbage ..mix well,
  5. Sprinkle some water add..salt ,coconut gratings and mix again.
  6. Close the lid and cook it on low flame until the cabbage and other veggies are cooked.
                               Serve as a side dish with meals or with chapatis.
Notes:-
  1. Can add only peas or carrots too instead of both.
  2. No need of blanching the peas.
  3. If using with chapattis ..add coriander leaves and squeeze lemon juice to make it more tastier.
Version 3 : Using Capsicums
         This version was inspired from a foodie friend who had posted this in a food group.
Ingredients:-
  • Medium sized cabbage chopped length wise
  • A tsp of mustard seeds
  • A tsp of urad dal
  • A few methi seeds
  • A sprig of curry leaves
  • 2 capsicums chopped length wise
  • Salt to taste
  • Oil as required
  • Red chillies 1-2
  • Coconut gratings
Method:-
  1. Heat oil in a pan and add mustard seeds.. when they splutter add urad dal ,methi seeds, curry leaves , red chillies and fry.
  2. Add chopped capsicum and cabbage together.. and mix well.
  3. Add salt and mix again.
  4. Close the lid and let it cook on low flame until done.
  5. Just before switching off add coconut gratings ..give a gentle mix and keep it closed for 2 minutes.
                   The delicious crunchy upkari is ready to be relished.
Notes:- I like this upkari to be  crunchy so I do not add any water and cook it on low flame stirring in between…you can add some water if you prefer.
